Kerala Style Pork & Potato Masala is made with pork and potatoes which are cooked in a typical South Indian spice mixture.

Let me reveal the secret of this recipe, which is to marinate the pork cubes and let it sit and develop the flavours in the refrigerator. Let’s discuss the marination now, I have used equal quantities of ginger paste and garlic paste, turmeric powder, chilly powder, garam masala and coconut oil for marination.

Kerala Style Pork & Potato Masala Recipe

Ingredients

  • Pork – 500 gms, cubes
  • Cconut oil -1 Tbsp
  • Curry leaves – 1 sprig
  • Mustard seeds -1/2 Tsp
  • Cloves -2 each
  • Whole black pepper corns- 1/2 Tsp
  • Dried chilly -2 each
  • Onion -1 medium, diced
  • ginger paste -1/2 Tsp
  • Garlic paste -1/2 Tsp
  • Turmeric powder -1 Tsp
  • Chilly powder – 1 Tsp
  • Garam masala – 1/2 Tsp
  • Coriander powder -1/2 Tsp
  • Potato – 200 gms
  • Salt to taste

Directions

  1. Marinate pork cubes with turmeric powder, coriander powder, coconut oil, ginger paste and garlic paste.
  2. Let it sit overnight in the refrigerator.
  3. Heat up a skillet and add coconut oil.
  4. Add curry leaves, mustard seeds, cloves, dried chilly and whole black pepper corns
  5. Fry off on a slow fire and let the flavor infuse.
  6. Now add chopped garlic and saute for  a minute.
  7. Stir in ginger paste and garlic paste
  8. Add powder spices in and stir fry on a slow fire until the raw flavor goes off.
  9. Now add the marinated pork and cook for a minute.
  10. Add in the potatoes and cook on slow fire until the pork becomes tender.
  11. Adjust the seasoning and serve hot.
