Kerala Style Egg Roast is delectably delicious egg dish from Kerala. Made from cooking hard boiled egg in a mild Kerala style gravy and finished with  a tempering of curry leaves and mustard seeds.

A super easy and super healthy dish for everyone. Egg roast is one of the most popular breakfast dishes in Kerala. Both the vegetarians and non-vegetarians love it.

Most of the breakfast dishes go very well Kerala Style Egg Roast, such as Dosa, Appam and Poori.  Appam and Egg roast is my personal favorite.

Everyone at my home love egg dishes. So, I end up cooking them more often as I think should or I cook them because nobody at home get bored of it.

Kerala Style Egg Roast Recipe..

Ingredients

Directions

  1. Hard boil eggs first (for 12 minutes), peel, give slit on the egg using a knife  and set aside.
  2. To hard boil the eggs, take eggs and water in pot and cook for 11-12 minutes.
  3. To make the gravy, heat coconut oil in a skillet.
  4. Splutter mustard seeds and fry the curry leaves.
  5. Add onion and saute well (for 5 minutes)
  6. Add crushed garlic and continue to saute for another 1 minute.
  7. Sprinkle the powdered spices and cook until the flavor becomes apparent.
  8. Slide in chopped tomato and cook till mushy.
  9. Now add the boiled eggs and cook on low for 5 minutes.
  10. Adjust the seasoning and serve.
