Kanava / Squid/Calamari Dry Roast-Kerala Style

Kanava or squid roast is one of the most  famous seafood delicacies in Kerala. If you ever plan for an evening  party with alcohol, then squid dry fry is a must and can be served as an appetizer.   Traditional squid roast is not normally dry, however I have made it dry and it tasted  better than semi-dry roast.

Ingredients

  • Squid/ kanava  – 500 gms, cubes
  • Ginger– 25 gms
  • Garlic – 25 gms
  • Turmeric – 1 Tbsp
  • Chilly powder- 1 Tsp
  • Black pepper- 1 Tsp
  • Curry leaves- 1 Tbsp
  • Oil for frying
  • Salt to taste

Directions

  1. Clean and cut squid.
  2. Marinate the squid with crushed garlicginger, turmeric, chilly powder, black pepper, salt and curry leaves.
  3. Refrigerate the marinated fish for 30 minutes.
  4. Heat oil in a skillet and shallow fry until done.
  5. Serve garnished with onion and lemon wedge.

Note: while shallow frying, use oil as less as possible.
