A very healthy stir-fry made of Ivy gourd/kovakka/tindly. Made with very little ingredients and  has got no over powering masala mix.

Ivy gourd / Kovakka Stir-Fry Recipe

Ingredients

  • Ivy gourd – 500 gms
  • Oil- 1 Tbsp
  • Shallots- 100 gms
  • Curry leaf- 1 Tbsp
  • Dry Chilly – 4 pcs
  • Mustard seeds – 1 Tsp
  • Black pepper – to taste
  • Salt – to taste


Directions

  1. Cut ivy gourd into quarters, slice shallots and keep aside.
  2. In a pan heat oil, add mustard seeds, shallots, curry leaf, dry chilly and let it crackle.
  3. Add ivy gourd, stir-fry over high heat for a minute, Add salt and black pepper.
  4. Cover with lid, reduce the fire to a slow medium and continue to cook until the ivy gourd is tender.5-7 minutes of cooking depending on how tender you want it to be…
  5. Adjust the seasoning and serve hot.
