Pulao Rice & Quinoa Salad Recipe

An incredibly delicious salad, particularly good for your lunch and is packed with protein rich quinoa, energy abundant rice and nutrient and fibre rich vegetables.  Pulao Rice & Quinoa Salad Recipe is not that difficult to make, make sure to have all the ingredients handy beforehand to avoid any unnecessary time wasting.

Pulao Rice & Quinoa Salad Recipe

The rice and quinoa is cooked seperately and cooled down and then gently tossed with a simple lemon juice and olive based dressing. I chose the tangy and sharp lemon juice based dressing to elevate the flavour profile of the salad and I wanted to keep the dressing simple.

Rice is cooked by the absorption method, same as the steps you follow to make any pulao rice. You can also use left over rice for this salad.

Pulao Rice & Quinoa Salad Recipe

Ingredients

  • Quinoa- 200 gms
  • Basmati Rice – 150 gms
  • Oliv oil – 1 Tbsp
  • Pepper corns -1/2 Tsp
  • Cumin seeds – 1/2 Tsp
  • Tumeric powder 1/2 Tsp
  • Cumin powder 1/4 Tsp
  • Onion – 1 medium, sliced
  • Potato – 2, medium diced
  • Geeen peas – 100 gms
  • Carrot- 1 sliced
  • Tomato – 1, sliced
  • Lemon juice -1 Tbsp for dressing
  • Olive oil -2 Tbsp for dressing
  • Salt to taste
  • Freshly ground black pepper to taste

Directions

  1. Heat up a thick bottomed vessel on a medium fire and heat up olive oil.
  2. Fry cumin seeds and black peppercorns, then add rice.
  3. Stir fry rice for about a 2 minute, add turmeric powder and cumin powder and sauté for a minute.
  4. Add in diced potato, green peas, carrot and pour water, Let it boil.
  5. Reduce fire to simmer and cook until rice is soft.
  6. In the meantime, take water and rice in an another vessel and cook until soft.
  7. Cool down both rice and quinoa completely.
  8. To Make the dressing, combine lemon juice and olive with salt and freshly ground black pepper.
  9. To Make the salad, combine rice, quinoa, sliced onion, sliced tomato, sliced carrot and the dressing and gently toss to mix.
  10. Dish out salad and enjoy.

Note: You can substitute basmati rice with any rice of your choice and follow the cooking instructions as per the label.
