Hing Chicken / Chicken Cooked In  Asafoetida Sauce is an easy and simple chicken dish made with marinated chicken cubes cooked in a tomato based sauce.

Asafoetida has a very strong pungent flavor but when you fry it in the oil it really gives out a onion-leek flavor and it adds to the  taste of the dish. I have marinated the chicken cubes with turmeric powder, chilly powder, coriander, cumin powder, ginger paste, asafoetida and I have let the chicken sit in the marinade overnight to develop the flavors.

  1. Heat up mustard oil and fry off bay leaves and cumin seeds..

2. Add 1 Tsp of hing powder and cook for minute. Then add marinated chicken cubes..

3. Stir fry chicken until light golden brown in color..

4. Now add chopped tomatoes and powdered spices..

5.Add 1 teaspoon of crushed chilly..

6. Cook on a slow fire, stirring occasionally..

7. Cook until the chicken is tender and adjust the seasoning..

Ingredients

  • Chicken – 1 kg, cubes
  • Asafoetida powder – 1 Tsp
  • Ginger paste -1 Tsp
  • Mustard oil – 1 Tbsp
  • Turmeric powder -1 Tsp
  • Chilly powder- 1 Tsp
  • Cumin powder – 1 Tsp
  • Coriander powder -1/2 Tsp
  • Bay leaves – 2
  • Cumin seeds- 1 Tsp
  • Tomato chopped- 1 cup
  • Crushed chilly – 1 Tsp
  • Salt to taste

Directions

  1. Marinate the chicken cubes with turmeric powder, chilly powder, coriander powder, cumin powder, asafoetida powder,ginger paste and oil.
  2. Ideally let the chicken sit in the marinade for overnight or at least for 2 hours.
  3. Heat up a vessel, pour vegetable oil.
  4. When the oil is hot, add bay leaves and cumin seeds.
  5. Let it fry for a minute and add 1/2 a teaspoon of asafoetida powder.
  6. Cook the spices on slow fire for a minute.
  7. Add marinated chicken and stir fry for 2 minutes.
  8. Stir fry until all sides are seared well.
  9. Then add 1 cup of chopped tomatoes and cook for 5 minutes.
  10. Add one teaspoon of crushed chilly.
  11. Cook on a slow fire till the oil starts to release from the sides of the vessel.
  12. Add water if needed (add water as per your desired consistency).
  13. Adjust the seasoning.
  14. Serve with boiled rice or any bread of your choice.
