Hearty Quinoa & Potato Salad is a very healthy and hearty main course salad made with quinoa, boiled potatoes, sour cream, green peas, cut corns and seasoning.

I have always been trying to include sour cream into my daily as much as I can into my daily diet and  this around I have added a table spoon of lemon zest to add a twist.

Hearty Quinoa & Potato Salad is a very simple and easy to make salad which is ideal as a main course lunch salad. How easy it is mix quinoa, diced boiled potatoes, sour cream, cut corns, green peas , lemon zest and seasoning, is not it?

Hearty Quinoa & Potato Salad Recipe..

Ingredients

  • Quinoa – 500 gms, cooked
  • Potatoes – 1 cup diced
  • Cut corns -1 cup, canned
  • Green peas -1 cup, frozen
  • Lemon zest – 1 Tsp
  • Sour cream -3 Tbsp
  • Salt to taste
  • Freshly ground black pepper corns
  • Mint – 1 Tsp, shredded

Directions

  1. Peel and dice potatoes.
  2. Cook the potatoes in boiling water, strain and let it cool down.
  3. Blanch green peas and let it cool down.
  4. Meanwhile, take sour cream in a bowl and mix in lemon zest, seasoning and shredded mint leaves.
  5. In another bowl take cooked quinoa, boiled potatoes, green peas, cut corns,sour cream dressing and gently toss.
  6. Transfer into serving dishes and Enjoy
