Happy Birthday Rishan..

Many many happy returns of the day dear Rishan. My younger son Rishan’s second birthday today, I just realize how quickly time flies by…and how fast you grow up in your life, Rishan..

As  you grown more naughty and independent, your traits has emerged stronger and stronger, I admire how sweet of a person you are. You are awesome. Your boundless energy, your sweet demeanor, your creative spirit- it all comes together to make you a truly remarkable boy..I love you and I wish you all the very best for your birthday!

The most difficult part  of his birthday celebration was to find the cake of his choice, after so much of brain storming, me,wife and Aadith (our elder son) have  decided to leave it up to him. When my wife took him to cake shop and asked him, which cake he liked, he pointedted  his finger at red velvet cake..(one hell of a problem solved just like that..!)

Well, we did not want to stop it there, we have made a sadya (sadya is a vegetarian feast) for him with his favorite semiya payasam as well..

Rishan likes semiya payasam to the most, he likes the pudding version of it though,..so made the pudding version for him..

Ingredients

  • Vermicelli – 200 gms
  • Ghee/ Butter- 25 gms
  • Sugar – 200 gms
  • Milk – 500 ml
  • cashew Nuts – 1 Tbsp

Directions

  1. Heat up the ghee and roast cashew nut. Remove and keep aside.
  2. In the same pan, break the vermicelli in to  1 inch length and roast ( in most of  the super markets ready to mix packets are available, so you don’t need to break and roast) on slow heat.
  3. Add  milk and cook for about 10 minutes.
  4. Add sugar and stir in continuously until the desired the consistency is achieved.
  5. Garnish with  cashew nuts .
  6. Semiya can be served hot or cold. You can always refrigerate for future, and use as and when you need it.
