Green Chilly Chutney

Chutneys play a salient role in Indian cuisine. Chutney is a sauce served in Indian subcontinent with appetizers, sandwiches, snacks or breakfast items. The best thing about chutney is that it gives an added flavor to the food item it is served with.

There are so many variations in chutneys itself such as sweet, spicy, sour, sweet and sour etc.. Tomato chutney, coriander chutney, mint chutney, chilly chutney, tamarind chutney are some of the most desirable chutneys in India. Indians make chutneys of all most everything, it can be made of fruits, vegetables, herbs and spices or it can be a  combination of many ingredients in one.

Green chilly chutney is a perfect accompaniment for dosa and idli. Although this green chilly chutney might sound extremely spicy for you, it can be made less spicy as well or medium spicy according to your taste and tolerance to chilly.

Here in this recipe, I have used both green chilly and bird eye chilly(Kanthari chilly- Keralites need no introduction to this..)

Ingredients

  • Green chilly – 100 gms
  • Bird eye chilly/Kanthari – 100 gms
  • Oil – 1 Tbsp
  • Garlic – 5 cloves
  • Turmeric powder – 1/2 Tsp
  • Mustard seeds
  • Vinegar – 1 Tsp, optional
  • Salt to taste
  • Water to blend

Directions

  1. Remove the stem and wash the chillies
  2. Heat 1/2 of oil in a skillet and add chillies
  3. Stir fry for about 2 minutes and add garlic.
  4. After a minute, add turmeric and continue to stir fry
  5. Cover with a lid and cook for 5 minutes.
  6. Remove lid and let it cool down
  7. Take the chillies in  a food processor and add enough water to blend, blend it to a smooth paste.
  8. Heat oi in the skillet and splutter mustard seeds and add the chilly paste to it.
  9. Cook for 2 minutes and your chutney is ready.

Note: Chutney can be refrigerated in an air tight container for a week

If you prefer the chutney to be thin or diluted, add water as needed.
