Green Chilli


Chillies belong to the capsicum family. There are different varieties of chillies. The commonly used green chilli variety in cooking is the Bird’s eye chili. Green chillies are harvested before they are fully ripened.  The chemical capsaicin that is present in the skin of chillies gives the heat to the vegetable. Green chillies are not as hot as red chillies and render a fresh and herbaceous flavour to the dish. They are used extensively in Indian and south-east Asian dishes.

It is available throughout the year. Apart from fresh green chillies, pickled green chillies, powdered green chilli and green chilli paste are also commercially available.

Look for the crisp and unwrinkled ones.

How to Store:

Discard the stem and pat the chillies with paper towel to remove any water on them. Then store them in a container or Ziploc bag in the refrigerator.

Culinary Uses:

  • Added to dishes for bringing heat and flavour
  • Used in almost every Vietnamese dish like soups, stir-fries, salads etc.
  • For making different kinds of pickles.
  • Used in almost every Indian dish like chutneys, pickles, curries, stew etc.
  • Chilli paste, along with other spices, is used as a marinade for fish and meat.
  • Green-chillies are first soaked in curd and sun-dried for days. These chillies can be deep fried in oil to make the popular, crunchy, South-Indian side-dish
  • Green chilli paste, blended with garlic and ginger paste is a staple spice mixture used in North Indian cuisine.
  • Used for tempering or
  • Green chilli is a common ingredient of the famous ‘Caribbean green seasoning’
  • Making green chilli sauce, a common ingredient of Chinese cuisine. It is used as dipping sauce or in stir frying.
  • Fried green chillies are served as accompaniment of many Indian street food, for e.g. vada-pav
  • Green chillies pickled in vinegar can be used as pizza toppings and in sandwiches.
