Good Friday Special Kanji/Rice Porridge

My best wishes to everyone observing Good Friday today.  Good Friday marks the day when Jesus Christ was crucified, the perfect sacrifice ever. Fasting and sobriety are needed to be observed as a tradition. Traditionally, meat items are  not allowed to be eaten on Good Friday. Most of the Christians avoid meat dishes (some will fast), some will choose light meal and  few eat vegetarian food.  I remember, kanji being served after the prayer in churches of Kerala. I think all most all Churches in Kerala have the same practice. Good Friday Special Kanji/Rice Porridge is  a perfect way to observe the tradition and stay healthy at the same time.

Kanji or rice  porridge good source of energy rich carbohydrates and will keep you going for the whole day. A bowl of kanji with pappadam (pappad) and lime pickle (any pickle of your choice will do) is the way to go.

Good Friday Special Kanji/Rice Porridge Recipe..

Ingredients

  • Parboiled rice – 1 cup
  • Water- 3 cups
  • Coconut milk – 1 cup
  • Grated coconut -1/2 cup
  • Shallots – 5 each
  • Garlic– 5 cloves
  • Salt to taste

Directions

  1. First of all you need to wash and drain the rice.
  2. Then in a medium sized pot bring the water to boil.
  3. Add rice into it and season with salt.
  4. When it comes to a boil again, reduce the fire.
  5. Crushed garlic and shallots needed to be added now.
  6. Let it cook on a simmering fire.
  7. When it is half done, add coconut milk and grated coconut.
  8. When the rice is soft, remove from the fire.
  9. Serve hot with lime pickle and pappadam.
