Freekeh, Quinoa Breakfast Porridge is a delicious and healthy recipe. Freekeh and quinoa is cooked in light cream milk and then mixed with caramelized apple, blue berries and strawberries.

If anyone out there wondering what freekeh is!. Okay, freekeh is a superbly nutritious and healthy grain made from roasting green durum wheat grains. The grains are harvested when it’s still green in color, threshed and sun dried to make this beautiful freekeh grains. For more info, click here.

Freekeh, Quinoa Breakfast Porridge Recipe with step wise  photos..

Ingredients

  • Freekeh-quinoa mix- 250 gms
  • Milk – 1 cup
  • Water – 1 1/2  cup
  • Sugar – 2 Tbsp
  • Apple- 1 each, wedges.
  • Blueberries
  • Strawberries

Directions

  1. Wash the freekeh-quinoa mix under cold running water.
  2. Strain and let it drain.
  3. In a medium sized sauce pan, take the freekeh-quinoa mix.
  4. Add water and bring it to a boil.
  5. Reduce the temperature and let it cook on a simmering fire for 7-8 minutes.
  6. Pour milk and continue to cook.
  7. In the mean time, sprinkle sugar in a skillet and when it starts to melt place apple wedges.
  8. Caramelize on both the sides and set aside.
  9. When freekeh-quinoa mix is cooked, add sugar and stir well.
  10. Cook to a porridge consistency, if required add milk or water as needed.
  11. When ready, garnish with caramelized apple, blueberries and strawberries.

Note: I have used light cream milk for cooking, you can also substitute water with milk and vice and versa. Use berries as needed.

Cook freek-quinoa mix in milk and water..

Heat up a skillet, sprinkle sugar, when its starts to melt place the apple wedges..

When the first side is done, flip over and caramelize the other side as well..

When the porridge is ready, garnish with caramelized apple, blueberries and strawberries.
