Egg Noodles Recipe

Boiled vegetable noodles are tossed with mixed shredded vegetables, onion,garlic, chilly sauce, tomato ketchup soy sauce and spices.

Ingredients

  • Plain noodle or whole wheat noodle – 400 gms
  • Carrot – 1 shredded or julienned
  • Cabbage – 1/2 cup julieened
  • Capsicum or bell pepper – 1/2 cup , julienned
  • French beans – 1/2 cup, shredded
  • Spring onion– 2 Tbsp, chopped
  • Oil – 1 Tbsp
  • Dried chilly – 2 pcs
  • Ginger – 1 Tsp, chopped
  • Garlic – 1 Tsp, chopped
  • Soy sauce – 1 Tbsp
  • Chilly sauce – 1 Tbsp
  • Tomato ketchup – 1/2 Tbsp
  • Egg – 2 nos
  • Freshly ground black pepper
  • Salt to taste

Directions

  1. Bring  salted water to boil in a medium sized pot.
  2. Add noodles into boiling water.
  3. Once the noodles are cooked, strain and spread it on a container.
  4. Whilst the noodles are boiling, cut the vegetable and set aside.
  5. Add 1 Tsp of oil, mix well and let it cool down.
  6. Heat oil in a pan, fry the dry chilly first.
  7.  Add chopped garlic and ginger it to saute.
  8. Increase the flame, add french beans and stir fry.
  9. When the beans are half done, add carrots, capsicum and cabbage.
  10. When the veggies are done (don’t over cook, should be crunchy), add  soy sauce,chilly sauce and tomato ketchup.
  11. Reduce the flame and cook for a minute.
  12. Break the eggs into it and stir fry.
  13. Add the noodle, salt and freshly ground black and mix well.
  14. Your egg noodles are ready now and enjoy.

Note: Noodles need to be just done, don’t over cook them. Whilst cook the vegetables , make sure that you retain the crunchiness.
