Egg and Coconut Stir Fry, Kerala Style

A simple, quick and super easy egg recipe made with a handful of ingredients yet so fulfilling. A perfect combination for rice and bread.

  • Egg – 6 nos
  • Vegetable oil – 1 Tsp
  • Mustard seeds – 1/2 Tsp
  • Curry leaves – 1 sprig
  • Onion – 1 medium, chopped
  • Turmeric powder -1/2 Tsp
  • Chilly powder – 1/2 Tsp
  • Grated coconut – 50 gms
  • Garlic – 2 cloves
  • Salt to taste


  1. Break the egg into a bowl and whisk using a fork. Set aside.
  2. In a skillet, heat oil and crackle mustard seeds.
  3. Add curry leaves and onion.
  4. Cook onion until soft.
  5. Grind together grated coconut, garlic, chilly powder and turmeric powder.
  6. Increase the temperature to medium high, add egg into it.
  7. Once egg is you stir fry continuously as the egg may get stick to bottom and does not cook evenly.
  8. Add ground coconut mix and continue to stir fry for 3 minutes.
  9. Adjust seasoning and serve hot.
