Egg Bhurji or Anda Bhurji is one popular breakfast dishes in India. Egg Bhurji/ Masala Scrambled Egg with a bread toast is a heavenly combination.

Egg bhurji is made from stir frying eggs in onion, tomato, Indian powdered spices and coriander leaves. As the egg bhurji is more famous towards the Northern part of India, ‘ Mutta Chikkiyathu'(I will share the recipe for Mutta Chikkiyathu soon) is more famous towards the South India, especially In Kerala. This egg bhurji recipe is a typical Kerala style preparation with mustard seeds, curry leaves and dry red chilly.

To start a perfect and productive day, having a breakfast of your liking is  very important.  Egg bhurji with toast is one of favorites. I opt this recipe only when I am rushing in the morning, as it is so easy to make.

Egg Bhurji/ Masala Scrambled Egg Recipe..

Ingredients

  • Egg – 6 each
  • Coconut oil -1 Tbsp
  • Mustard seeds – 1/2 Tsp
  • Curry leaves – 1 sprig
  • Dry chilly – 2 each
  • Shallots -1 Tbsp, chopped
  • Grated coconut- 1/2 cup
  • Chilly powder -1/2 Tsp
  • Turmeric powder – one pinch
  • Salt to taste

Directions

  1. Heat coconut oil in a skillet.
  2. Crackle mustard seeds first.
  3. Then add dried chilly and curry leaves.
  4. Let the oil to infuse the flavor.
  5. Now add shallots and stir fry on a medium fire.
  6. Add grated coconut, continue to cook for two minutes on slow fire.
  7. Stir in a pinch of turmeric and half a Tbsp of chilly powder.
  8. Break the eggs and pour into the cooked spice mix.
  9. Sprinkle salt.
  10. Stir fry until done.
  11. Serve hot with toast.
