Easter Special Chicken Roast

One of my personal favorites and a very popular chicken dish from Kerala. Easter Special Chicken Roast is one of the hot favourites during Easter and it’s full of flavours.

Locally it’s known as Kozhi Roast and a very popular menu item in most of the local restaurants. A very easy to make dish, the spices are dry roasted first and then powdered with ground spices. It’s very important that you marinate the chicken beforehand and give at least one hour of resting.

Like I said earlier,the key for the recipe is to marinate the chicken and let it rest for a good one hour. Then transfer the marinated chicken into a thick bottomed cooking vessel and start cooking on slow flame. Cook until the chicken is soft and tender and finish with more curry leaves, coriander leaves and coconut oil.

Easter Special Chicken Roast Recipe with step by step photos..

Ingredients

  • Chicken -700 gms, cubes
  • Coconut oil -1 Tbsp+ 1 Tbsp for finishing
  • Cardamom -2 each
  • Cloves -3 each
  • Cumin seeds-1/2 Tsp
  • Coriander seeds -1/2Tsp
  • Fennel seeds -1/4 Tsp
  • Turmeric -1 Tsp
  • Chilly powder -1 Tsp
  • Garam masala -1/2 Tsp
  • Green chilly – 2 slit
  • Salt to taste
  • Freshly ground black pepper
  • Ginger -1/2 Tsp, paste
  • Garlic -1/2 Tsp, paste
  • Curry leaves -1 sprig
  • Coriander leaves -2 Tbsp

Directions

  1. Cut chicken into cubes, slice onion and set aside.
  2. Dry whole spices and powdered spices on a moderate heat until you get a cooked flavour and process them into fine powder.
  3. Marinate  chicken with powdered spices, sliced onion, curry leaves, coconut oil, ginger and garlic paste, salt and green chilly.
  4. Let marinated chicken rest for an hour.
  5. Heat up thick bottomed cooking vessel, transfer the marinated chicken into it.
  6. Cook on a slow fire until the chicken is soft and tender.
  7. Towards the end add one more teaspoon of coconut oil, curry leaves and coriander leaves.
  8. Then increase the fire and cook for an another 2-3 minutes.
  9. Transfer into serving dish and enjoy with Kerala Paratha

Note: I recommend you use coconut oil for this recipe for the maximum flavour , but you may use any oil of your choice.
