Do you know the best part about this dish? Well, the flavor it produces when the butternut squash is cooked together with the perfect blend of home made garam masala, is an absolute treat. I was cooking butternut squash with the Indian spices itself for the first time. So I really did not know how it was going to turn out to be. But, to my surprise Dry Butternut Squash Masala Recipe came out really well.

Pumpkin is very familiar produce in India and so may different and mouth watering delicacies are  made across India. Some of the famous delicacies from Kerala are Pumpkin erussery, Kootu curry, Pachadi etc..

Question, what is butternut squash then and how  pumpkin is different from butternut squash. Well, both pumpkin and butternut squash belong to the same family and they taste almost the same. Therefore, we can say that pumpkin is squash. There so many different varieties of squash are found and pumpkin is just one among them.For more info, click here

Dry Butternut Squash Masala Recipe  with step wise photos..


  • Pumpkin – 500 gms
  • Vegetable oil- 1 Tbsp
  • Black pepper whole – 1 Tsp
  • Cumin seeds – 1/2 Tsp
  • Tuvar dhal – 1 Tbsp
  • Onion – 2 medium, chopped
  • Gingergarlic paste- 1/2 Tsp
  • Coriander powder -1/4 Tsp
  • Chilly powder -1/4 Tsp
  • Cumin powder -1/4 Tsp
  • Garam masala -1 Tsp
  • Salt to taste
  • Freshly ground black pepper to taste.
  • Coriander leaves – 1 Tbsp, chopped


  1. Peel and dice the butternut squash.
  2. Heal oil in skillet and add whole black pepper corns.
  3. Add onion and pumpkin,  saute for a minute.
  4. Keep the fire to low and add powdered spices.
  5. Saute until the flavor becomes apparent.
  6. Add water and season.
  7. Bring to a boil and reduce the fire to slow simmer.
  8. Cook until the butternut squash is tender .
  9. Stir in chopped coriander leaves and adjust the seasoning.
  10. Serve hot with rice.

Note: I have used a very good amount of freshly ground black pepper to cut down on the sweetness of butternut squash, you may please tweak the  recipe as per your taste.

Fry cumin seeds, whole black pepper corns and tuvar dhal..

Saute the powdered spices well with the butternut squash..

Add one cup water and simmer until the butternut squash is cooked..

When the butternut squash is tender, add chopped cilantro and adjust seasoning..
