Drumstick leaves and Egg Stir Fry

Keralites need no introduction to drum stick leaves. Drumsticks and drumstick leaves are used for cooking and it has got many  health benefits. Drumstick leaves or muringa ila is widely used in making Ayurvedic medicines and is a great source of essential nutrients and antioxidants.


  • Drumstick leaves – 4oo gms
  • Egg – 6 nos
  • Oil- 1 Tbsp
  • Mustard seeds – 1 Tsp
  • Curry leaves- 1 sprig
  • Shallots – 50 gms, sliced
  • Green chilly – 1 Tbsp, chopped
  • Turmeric powder – 1 Tsp
  • Chilly powder – 1 Tsp
  • Grated coconut – 100 gms
  • Cumin seeds – 1/2 Tsp
  • Garlic– 3 cloves
  • Salt to taste


  1. Remove the drum stick leaves and set aside.
  2. In a medium sized skillet, heat oil and splutter mustard seeds.
  3. Add curry leaves and dry chilly, cook for a minute.
  4. Add chopped shallots, green chilly and stir fry on a medium high heat.
  5. Sprinkle turmeric and chilly powder, cook well.
  6. Add drumstick leaves and mix well.
  7. Cover with lid a cook on a slow fire.
  8. In the mean time, crush together grated coconut, garlic, cumin seeds and green chilly in a food processor.
  9. Add the crushed mixture to the drumstick leaves.
  10. Break the egg in a container and mix well.
  11. Add the egg to the drumstick leaves and stir-fry.
  12. Adjust the seasoning and serve hot.
