Drumstick and Tomato Curry

A simple yet very healthy vegetarian recipe with an innovative touch. You may have come across a lot of recipes call for drumstick as a key ingredient. What makes this recipe special recipe is that the whole coriander is pre-roasted in a pan before blending it together with the other powdered spices..


  • Coconut oil -2Tbsp
  • Mustard seeds – 1/2 Tsp
  • Curry leaves – 1 Tbsp
  • Dry chilli – 4 pcs
  • Drumstick – 400 gms
  • Tomato – 250 gms
  • Green chilli (slit)- 50 gms
  • Grated coconut – 150 gms
  • Chilli powder- 1 Tbsp
  • Coriander powder – 1 Tbsp
  • Chilli powder – 1 Tsp
  • Black pepper powder – 1Tsp
  • Fenugreek powder – 1/2 Tsp
  • Salt to taste


  1. In a medium size pan cook together drumstick, tomato and green chilli with enough to cover and salt.
  2. Blender together pre-roasted coriander seeds, chilli powder, black pepper powder and fenugreek powder and set aside.
  3. Once the vegetables are tender, add mix into the pan and bring to boil and let simmer on a slow fire for 10 minutes.
  4. Adjust the seasoning.
  5. To make a tempering- heat oil in pan and crackle mustard seeds, curry leaves and dry chilli and cook until the flavor is apparent.
  6. Add the tempering into pan and give nice stir and serve hot!.
