I had this Delightful Tomatillo & Purple Jalapeño Salsa with baked salmon and the combination was absolutely superb. I have used purple jalapeño for this recipe and the crunchy and the classic jalapeño flavoured purple jalapeños did really add great flavour to this recipe.

I would strongly recommend you to let this salsa sit at least for a good two hours before using, so that the flavour intensifies and the best result will be guaranteed. You can make and keep them refrigerated for a week and use it as you need it..

Delightful Tomatillo & Purple Jalapeño Salsa

Delightful Tomatillo & Purple Jalapeño Salsa Recipe..

Ingredients

  • Tomatillo -1 cup, chopped
  • Cherry Tomatoes – 1/2 cup, chopped
  • Capsicum – 1/2 cup, chopped
  • Onion -1 medium, chopped
  • Coriander -2 Tbsp, chopped
  • Extra virgin olive oil -2 Tbsp
  • Lime juice -2 Tbsp
  • Salt to taste
  • Freshly ground black pepper corns

Directions

  1. Wash all the veggies and chop them and set aside.
  2. In a bowl, combine all the veggies and add olive oil, lime juice, seasoning and chopped coriander leaves.
  3. Mix well to combine all the ingredients together.
  4. Let it sit for 2 hours at least before using it (preferably refrigerate).
  5. You can make and refrigerate the salsa for week and use it as you need it.
  6. Enjoy your salsa.
