Delicious Cauliflower & Potato Curry is made with potatoes and cauliflower cooked in a mild and aromatic onion–tomato based sauce.
I can’t stop myself from trying out enough of potato and cauliflower combination. My favourite combination of vegetables, I have tried myriad of recipes with potatoes and cauliflower and more to come.

Unlike normal Indian style potato and cauliflower recipes, this recipe has got more gravy in it and I have slow cooked the vegetables in the gravy to get the best flavor and taste.

Delicious Cauliflower & Potato Curry With Step By Step Photos..
1.Heat oil and fry off cardamom, cinnamon, cloves and bay leaves..
2. Add cumin and cook for a minute
3.Add onion and cook until soft..
4.Add ginger–garlic paste and cook for a minute..
5. Add powdered spices and cook for 2 minutes on slow fire..
6. Add tomato puree..
7.Add diced potatoes …
8.Cover with a lid and cook until half done.
9.Add cauliflower and cook until tender..
10. Adjust the seasoning and serve.
Ingredients
- Potatoes – 500 gms, cubes
- Cauliflower – 500 gms, small florets
- Vegetable oil – 1 Tbsp
- Cumin seeds – 1 Tsp
- Cinnamon stick – 1/2 inch
- Bay leaves -1
- Cardamom– 3-4 each
- Cloves – 1/2 Tsp
- Onion – 2 medium, chopped
- Green chilly – 2 slit
- Ginger–garlic paste – 1 Tbsp
- Turmeric powder – 1 Tsp
- Chilly powder 1 1/2 Tsp
- Cumin powder – 1/2 Tsp
- Tomato – 3 pureed
- Salt to taste
Directions
- First of all blend tomatoes in a food processor and set aside.
- Heat up oil in vessel and fry off cumin seeds first.
- Then add bay leaves, cardamom, cloves and cinnamon stick.
- Let the whole spices cook on a slow fire for a minute and add chopped onion.
- Cook the onions for 2-3 minutes.
- Add salt, green chilly and ginger–garlic paste.
- Cook on a slow fire for 2 minutes.
- Now add the powdered spices and cook for 2 minutes or until the raw flavor goes off.
- Add the pureed tomatoes and cook for 3 minutes.
- Add diced potatoes, cover with a lid and cook on slow flame.
- When the potatoes are half done(or after 5-6 minutes), add the cauliflower.
- Cover with a lid and cook until the potatoes and cauliflowers are done.
- Adjust the seasoning and enjoy your Delicious Cauliflower & Potato Curry.
