Delicious Beef & Quinoa Salad is a very simple and straight forward with a handful of ingredients such as quinoa, onion (both and red brown), carrots and beef. I have used  a simple citrus vinaigrette (lemon) to accompany the salad.

A perfect lunch salad  to use up your left over quinoa. I normally cook quinoa right from the scratch for all my recipes, this time around I had some left over from yesterday(which was just enough for one portion). One of the things I like about making quinoa salad is that it’s very easy to toss, do you agree? Try salad this out and let me know.

For the dressing- just emulsify lemon juice, salt, ground black pepper and olive oil. You can get creative by adding dry oregano (or fresh) to the dressing as oregano flavor goes very well quinoa.

Delicious Beef & Quinoa Salad Recipe

Ingredients

  • Quinoa – 300 gms
  • Water – 500 ml
  • Salt to taste
  • Freshly ground black pepper
  • Red onion– 1 sliced
  • Onion brown -1 sliced
  • Carrot – 2 , sliced
  • Rib eye steak – 500 gms
  • Lemon juice- 1 Tbsp
  • Olive oil -75 ml
  • Oregano – 1/2 Tsp, dry

Directions

  1. In a pot, take both quinoa and water and bring to a boil.
  2. Reduce the flame to slow and continue to cook with the lid on.
  3. When the quinoa soft, remove from the fire and let it cool down.
  4. Mean while, make the dressing. To make the dressing, in bowl take lemon juice, salt and black pepper.
  5. Add olive into it and mix well, finish with oregano.
  6. To cook the steak, heat up oil in a skillet and cook to your preferred doneness (medium rare to medium doneness preferred) and dice them to bite size pieces (cubes).
  7. Now it’s time to mix the salad- in a bow take quinoa, cut veggies, beef cubes and pour the dressing.
  8. Toss gently to mix all the ingredients and serve.

Note: I have used rib eye steak here, you can replace it with any cut of beef.
