The white pepper gives the sharpness and kick to this soup, but be mindful while adding it to the soup.

Chicken, Mushroom & Sweet Corn Soup Recipe

Ingredients

  • Chicken breast – 2 each
  • Mushroom button or white – 100 gms
  • Sweet corns -100 gms
  • Oil -1 Tbsp
  • Onion-1 medium, chopped
  • Garlic -1 Tsp,chopped
  • Ginger – 1Tsp, chopped
  • White pepper  to taste
  • Salt to taste
  • Soy sauce taste
  • Water as needed
  • Green onion or scallions – 2 Tbsp, chopped
  • Corn starch to thicken (optional)

Directions

  1. In medium sized pot, heat up oil first.
  2. Add chopped onion and saute for a minute.
  3. Add chopped ginger and garlic.
  4. Keep the flame to a low and continue to cook .
  5. After 2 minutes, add mushrooms and corn
  6. Cook well on slow flame until mushrooms are soft.
  7. Add  chicken breast and add enough water.
  8. Season with salt and pepper and cook on a simmering fire.
  9. When the chicken is cooked (should take about 10-12 minutes), add soy sauce.
  10. Now remove the cooked chicken breast from the soup and pull the meat to make it flaky.
  11. Bring the soup again to a boil and add corn starch to thicken the soup.
  12. Add the flaky chicken back to soup and adjust the seasoning.
  13. Finally, add chopped green onion to finish the soup.
  14. Serve hot.
