Chicken, Carrots, Mushroom Soup Recipe

Chicken, carrots, mushroom  soup is made from gently simmering chicken, carrots and mushroom in flavored chicken stock .

There is nothing like a bowl of  hot soup. Soup can easily transform or elevate your mood. Do you want to try?  I bet, you won’t be disappointed!  First of all soups are very easy to make.  Soups are nutrient rich and for most of us it’s a meal by itself. Try out this Chicken, carrots, mushroom  soup recipe..

Ingredients

  • Chicken breast – 300 gms, diced
  • Olive oil/ vegetable oil – 1 Tbsp
  • Onion – 1 medium, chopped
  • Carrots -1 , diced
  • Purple carrots – 1 , diced
  • Portabello mushroom/field mushrooms -1 each, diced
  • Garlic– 3 cloves, crushed
  • Chicken stock – 2 cups
  • Salt to taste
  • Rosemary  as needed

For Chicken Stock:

  • Chicken bones – 2 Kg
  • Carrots – 1, roughly diced
  • Onion – 1, roughly diced
  • Celery -1 stick, roughly diced
  • Parsley stalk
  • Bay leaves – 3 each
  • Water as needed

Directions

  1. First of make the chicken stock.
  2. To make make the chicken stock, in a pot combine all the ingredients for stock.
  3. Add cold water to it and simmer for about 3-4 hours.
  4. Strain the stock and set aside.
  5. To make the soup, heat oil in a medium sized pot.
  6. Saute onion and garlic.
  7. When the onion is soft, add carrots and continue saute.
  8. Once the carrots starts to change color, add chicken.
  9. Continue to saute for 2 minutes.
  10. Then mushrooms to it and continue to saute for another 3 minutes.
  11. Pour the chicken, add rosemary sprigs and let it simmer.
  12. Cook the soup on a simmering until chicken and vegetable are done.
  13. Adjust the seasoning and serve hot.

Note: Make it point to scum the soup at regular intervals while simmering to avoid the soup to become cloudy. ( To scum means- removing the impurities settles on top while simmering the soup).

Pour stock and let it simmer and cook until chicken and vegetables are tender..

Make sure to remove the impurities while simmering…

    Hi Bhagyalekshmi, I was just wondering where did this colour come from! Now I know. I could not get the purple carrots , so I have made my own version of it. I have never been a soup lover, no I am. Thank you for the inspiration.
