This recipe is very simple and easy to make- begin with the tadka and then stir fry the grated cauliflower with the powdered spices and then cooked quinoa is added into it.

I love my South Indian tadka ( tadka means tempering), cooking a meal with South Indian tadka is just an experience. For those of you don’t know about South Indian tadka, it’s made with coconut 🌴 oil, dry red chillies, mustard seeds and curry leaves. Heat up coconut 🥥  oil in a skillet, when it reaches the smoking point, reduce the fire , add curry leaves, dry chilly, mustard seeds and let it and infuse the flavours.

Cauliflower & Quinoa Stir Fry, South Indian Style with step by step photos..

Ingredients

  • Cauliflower – 2 cups, grated
  • Quinoa -2 cups, cooked
  • Coconut oil -1 Tbsp
  • Curry leaves -1 sprig
  • Mustard seeds -1 Tsp
  • Dried red chilly -3 each
  • Red onion or Shallots -1/4 cup, chopped
  • Turmeric powder -1/2 Tsp
  • Chilly powder -1/2 Tsp
  • Salt to taste

Directions

  1. Wash and grate cauliflower, set aside.
  2. Heat up a skillet and add coconut oil.
  3. When oil reaches smoking point, add mustard seeds, curry leaves and dried red chilly.
  4. Let it crackle and infuse the flavours.
  5. Add red onion and stir fry on a medium heat until soft or translucent.
  6. Now stir in the powdered spices, salt and cook them off on a slow fire.
  7. Add in grated cauliflower and stir fry on medium-high flame.
  8. Once grated cauliflower is cooked, add in cooked quinoa and stir fry for a couple of minutes.
  9. Adjust the seasoning.
  10. Transfer into serving dishes and Enjoy.
