Cabbage, Carrots and Beans Thoran

A perfectly cooked thoran with a combination of vegetables such as cabbage, beans and carrots in a spicy coconut-spices mixture. The tenderness of cabbage, sweetness of carrots and the crunchiness of beans are blended together wisely so that the maximum satisfaction is achieved.

Ingredients

  • cabbage – 200 gms
  • Carrots- 150 gms
  • Beans – 150 gms
  • Onion- 1 medium, chopped
  • Coconut oil – 1 Tbsp
  • Mustard leaves – 1/2 Tsp
  • Curry leaves – 1 sprig
  • Grated coconut – 150 gms
  • Garlic – 2 cloves
  • Cumin seeds – 1/2 Tsp
  • Chilly powder – 1 Tsp
  • Turmeric powder – 1 Tsp
  • Salt to taste

Directions

  1. Dice carrots, grate cabbage, cut beans and set aside.
  2. Keep your onions chopped.
  3. Heat oil in medium sized vessel, splutter mustard seeds.
  4. Add curry leaves and infuse the flavor.
  5. Add onion and green chilly and cook to light golden brown in color.
  6. Add turmeric powder and chilly powder.
  7. Add beans, carrots and cabbage , saute for 2 minutes on low flame.
  8. Cover with a lid and continue to cook.
  9. In the mean time, in food processor crush gated coconut, garlic and cumin seeds.
  10. Add the coconut mixture to the cooked beans-carrot-cabbage.
  11. Cook on medium high flame for 5 minutes.
  12. Adjust seasoning and serve hot.
