Do you know, any vegetable (or even any vegetable part) can make a tasty soup! Yes, I have been keeping all the broccoli stems from the last few days and thinking of making a soup out of it. I was little bit skeptical about how the outcome is going to be though. But, the finished product was awesome. I have cooked tough broccoli stems on low flame with onion and garlic  and then blend into a fine puree and finished with a tiny bit of cream and parmesan cheese.

The smooth and silky texture of the soup  with moderate flavor of parmesan cheese and sweet and garlicky taste of roasted garlic in olive oil gave me an sensational experience. I hope you try out this Broccoli,Parmesan Cheese & Roasted Garlic Soup recipe and do let me know how it turned out!

Broccoli,Parmesan Cheese & Roasted Garlic Soup Recipe..

Ingredients

  • Broccoli stems – 400 gms
  • Broccoli florets -100 gms (optional)
  • Butter /Olive oil- 2 Tbsp
  • Onion– 1 medium, chopped
  • Garlic – 2 cloves, chopped
  • Chicken stock/Vegetable stock/ Water – 1 Liter
  • Salt to taste
  • White pepper to taste
  • Parmesan cheese -1 cup
  • Cream- 50 ml
  • Garlic  – 8 cloves for roasting

Directions

  1. Slice or chop the broccoli stems into smaller pieces.
  2. Heat oil in a pot, add chopped onion and chopped garlic and saute for 2 minutes.
  3. Add broccoli stems and saute for another 3-4 minutes.
  4. Pour the stock or water and bring to a boil.
  5. Reduce the flame to simmer and cook until the broccoli is tender.
  6. In mean mean time, apply olive oil garlic cloves and roast them until soft.
  7. Stir in parmesan cheese and cream and mix well.
  8. Remove from the fire and let it cool down a bit.
  9. In a food processor, blend to smooth consistency.
  10. Adjust the seasoning.
  11. Serve garnished with roasted garlic.

Note: If you would like to use broccoli florets, you can use it as well. For this soup I have  used 90% broccoli stems and 10% broccoli florets, you alter the ratio according to your taste and preference.
