Brinjal Dry Masala- Kerala Style is a mouth watering side made with brinjal strips cooked in a typical South Indian style. Brinjal strips are stir fried in onion, garlic, powdered spices masala mix and a tempering made of mustard seeds, cumin seeds and curry leaves.
I am not really sure if everyone likes brinjal or eggplant. Well, eggplant is very nutritious and healthy and especially if you to want follow a healthy habit then you should add brinjal very often into your diet.
A quick and easy recipe and you can make this delicacy with a handful of ingredients. A perfect side dish for lunch and a healthy side dish option for kids.

- Wash and cut brinjal into strips, chop onion and set aside.
- Heat oil in a skillet, splutter seeds.
- Add cumin seeds and curry leaves, let the flavor infuse.
- Add garlic and saute for a minute.
- Add onion and continue to saute for 3 more minutes.
- Now you can add powdered spices such as turmeric, coriander and chilly powder.
- Cook on slow fire until the raw flavor goes off.
- Add brinjal, salt and mix well.
- Cover with lid and cook on medium low heat for 5 – 7 minutes.
- Serve hot with roti or rice.
