I have been thinking about a quinoa dish without milk , which is easy to make, yummy and nutritious. I love berries for breakfast and I thought berries and quinoa could be a killer, yes, it turned out perfect.

I have used water to cook quinoa in this recipe, if you could replace water with milk of choice. Here in this recipe, I have used strawberry, blueberry and white currants. Again, you could add as many varities of berries as you may like.

Breakfast Quinoa & Berries Salad Recipe

Ingredients

  • Quinoa – 200 gms
  • Water – 2 cups
  • Strawberry -1/2 cup, quartered
  • Blueberry -1/2 cup
  • Brown sugar to taste
  • White currants as needed
  • Cashew nuts chopped

Directions

  1. Place the quinoa and 2 cups water in a medium sized sauce pan and bring it to the boil.
  2. Once the water has come to a boil, reduce heat and let it simmer.
  3. Cover with a lid and cook the quinoa for approximately 20 minutes.
  4. When it is almost done, add sugar and continue cooking until tender.
  5. Remove from the fire and set aside to cool down.
  6. Meanwhile, cut berries and set aside.
  7. To make the salad- in a clean bowl combine quinoa and berries, mix well.
  8. Serve cold and enjoy.
