Black Rice Pudding with Mango and Cardamom

Black rice and mango pudding is made with black rice, which is  slowly cooked to perfection in milk and finished with cream, butter and mango. Today I have made this wonderful black rice and mango pudding which has really turned out great and tasted really yummy yummy. I just could not resist taste, so I had it for the breakfast before rushing to work and saved some for dinner as well. A very healthy recipe and I felt as if I have had something really tasty yet healthy for breakfast this morning and I making my day at work ..

The other day I found a packet of black rice at the super market and I have immediately grabbed. It’s almost been a month since it has been sitting in my shelf and I thought I should use the rice and try something with it..I thought of making pulao/pulav first and then this pudding idea came into my mind all of a sudden. And, I knew mango would go very well with it and I was not wrong, black rice and mango combination has really worked out and I was really happy with the flavor profile. It’s sticky texture and nutty flavor with the sweetness of mango was really awesome..Yes, black rice pudding with mango is a perfect way start your day well..

  • Black rice – 250 gms
  • Milk – 1 cup
  • Water- 1 cup
  • Cream- 1/4 cup
  • Sugar – 200 gms
  • Butter- 1 Tbsp
  • Cardamom pods – 2 each
  • Mango as needed (diced)


  1. Soak the black rice for 30 minutes.
  2. Drain and set aside.
  3. Take rice in a medium sized pot, add one cup of water and one cup of milk.
  4. Bring to boil and cook until done in a simmering fire.
  5. Once the rice is cooked, add cream and sugar.
  6. Continue to cook until the sugar is dissolved and you get a pudding consistency.
  7. Finish with butter, diced mango and crushed cardamom.
  8. Serve warm garnished with mango.
