Bell Pepper curry

Green and yellow bell peppers cooked in a mild Kerala style oniontomato gravy.

Ingredients

  • Green pepper  – 200 gms
  • Yellow pepper – 200 gms
  • Oil – 1 Tbsp
  • Mustard seeds – 1/2 Tsp
  • Dry chilly -2 pcs
  • Onion– 200 gms, diced
  • Tomato – 2 medium, diced
  • Ginger– 1 Tsp
  • Garlic – 1 Tsp, crushed
  • Turmeric powder – 1 Tsp
  •  Chilly powder – 1 Tsp
  • Coriander powder – 1/2 Tsp
  • Coriander leaves/ cliantro – 1 Tbsp, chopped
  • Salt to tste

Directions

  1. Dice bell peppers, onion, tomato  and set aside
  2. In a medium sized vessel, heat oil and add mustard seeds and let it splutter.
  3. Add dry chilly and let the flavor infuse.
  4. Add onion, saute for 2 minutes.
  5. Add garlic and ginger, cook till onions are light brown in color.
  6. Add powdered spices such as turmeric, chilly and coriander powder.
  7. Cook well and then add tomatoes.
  8. Cook tomatoes on a medium fire until they are cooked, but not mushy.
  9. Add bell peppers, cook for about 2 minutes.
  10. Adjust seasoning and sprinkle chopped cilantro.
  11. Serve hot.
