Beet Root Soup- Indian Style

Yet another healthy soup, this beet root soup recipe is purely Indian and it’s mild and super delicious.

Ingredients

  • Beet root – 3oo gms
  • Oil – 1 Tsp
  • Shallots – 2/3 nos
  • Curry leaves – 1 sprig
  • Grated coconut – 50 gms
  • Garlic – 2 cloves
  • Cumin seeds – 1/2 Tsp
  • Chilly powder – 1 Tsp
  • Turmeric – 1/2 Tsp
  • Coriander powder – 1/2 Tsp
  • Garam masal – 1/2 Tsp
  • Water – 100 ml
  • Salt to taste

Directions

  1. Peel, cut into quarters  and slice.
  2. Cook beet root with turmeric and salt.
  3. In a skillet, heat oil. Add curry leaves and shallots, cook for a minute.
  4. Add chilly powder, coriander powder and garam masala and cook well on a slow fire.
  5. Add this to cooked beet root.
  6. Grind together, coconut, cumin seeds and garlic to a fine paste.
  7. Add the coconut paste to the cooked beet root.
  8. Cook for about 5 minutes.
  9. Serve hot.
