Perfect Kerala Style Beef Roast Recipe

This sumptuous and perfect Kerala style beef roast recipe is dry from outside and pretty succulent from inside. I have tried many variations of it, somehow I could not manage the real and tasty ones I normally eat at Kallu shappu (Toddy shops in Kerala are normally called Kallu shappu). This perferct Kerala style beef recipe is an end product lot of  research, trying and tasting at home.

The beef is marinated overnight with Indian spices, do not be put off by over night marination and the beef is cooked on a slow fire, once cooked then the beef is dry roasted again with the powdered masalas to get this perfect Kerala style beef roast recipe.

Ingredients

  • Beef – 500 gms, cubes
  • Coconut oil – 3 Tbsp
  • Turmeric powder – 1 Tsp
  • Chilly powder – 1 Tsp
  • Coriander powder – 1/2 Tsp
  • Fennel – 1 Tbsp
  • Cloves – 1/2 Tsp
  • Staranise – 2 pcs
  • Cinnamon stick 1 pc
  • Black peppercorn – 1 Tsp
  • Curry leaves – 2 Sprig
  • Mustard seeds – 1 Tsp
  • Dry chilly – 3 each
  • Coconut flakes – 2 Tbsp
  • Red onion – 2 medium, sliced
  • Green chilly -4 each
  • Salt to taste
  • Sliced onion for garnish

Directions

  1. Cut the beef into medium sized cubes.
  2. Dry roast the whole maslas such as cinnamon stick, cloves, fennel seeds, staranise and black pepper corns in a skillet.
  3. Blend the dry roasted masalas and set aside
  4. Marinate the beef with the dry roasted masalas, turmeric  powder, oil, onion, curry leaves, salt.
  5. Leave the marinated beef inside the refrigerator for over night.
  6. In a medium sized thick bottomed pan, cook the beef on a slow fire.
  7. When the beef is tender, put the fire off and let it sit.
  8. At this stage make tempering in a skillet and add it to the beef.
  9. To make the tempering, heat oil in a pan, splutter mustard seeds, add curry leaves and  dry chilly.
  10. Add the coconut cubes and let it brown.
  11. Add the tempering to beef and continue to cook on a slow fire.
  12. Cook for about another 10 minutes and check the seasoning.
  13. Served garnished with sliced onion.
  14. Enjoy your perfect Kerala style beef roast recipe with rice or paratha.
