Beef & Quinoa Lunch Salad is an easy, tasty, flavorful and protein rich salad perfect for lunch. This incredible salad recipe is one of my personnel favorites and I must have made it a lot of times that I can’t even remember. A simple and easy to make salad with quinoa, onion, carrot, beef and a spicy soy ginger dressing.

The spicy soy ginger dressing is very easy to make. Combine soy sauce, crushed ginger, green chilly, lemon juice, palm sugar and let it sit for at least 30 minutes to get the flavors infused.

Ingredients

  • Quinoa – 1 cup
  • Olive oil – 1 Tsp
  • Chicken stock – 2 cups
  • Ribeye steak /cut- 400 gms
  • Salt to taste
  • Freshly ground black pepper
  • Red onion – 1 sliced
  • Carrots – 2 medium, sliced
  • Soy sauce – 1/4 cup
  • Ginger – 1 Tbsp, crushed or chopped
  • Green chilly – 1 Tsp , chopped
  • Lemon juice – 1 Tbsp
  • Palm sugar -1/2 Tsp

Directions

  1. Start with making the dressing and let sit for a good 30 minutes to infuse all the flavors.
  2. To make the dressing, combine soy sauce, crushed ginger, chopped green chilly, lemon juice and palm sugar.
  3. To cook the quinoa, heat up olive in a sauce pan and  stir fry quinoa for a minute.
  4. Pour in chicken stock and bring to a boil.
  5. Reduce to simmer and cook with a lid on until tender (takes about 15-18 minutes)
  6. Remove from the fire and let it outside with lid on for about 10 minutes.
  7. To cook the steak, heat up a skillet and smear olive oil and cook to your liking (I prefer medium done)
  8. To make the salad, combine the veggies, quinoa and dressing and toss well.
  9. Dish out the mix and top it up with sliced beef.
