Aloo Matar Recipe (Potato & Green Peas Curry) is an ultimate vegetarian/ vegan delight from India, made with potatoes , green peas and basic spice mix. One of the most popular dishes every North Indian household.

There are so many regional variations of this dish is available across India 🇮🇳, let me share with you the traditional Punjabi style  Aloo Matar Recipe (Potato & Green Peas Curry). This recipe is my personal favourite and it’s very easy and simple to make.

First of all the powdered spices are cooked in vegetable oil prior to adding onion and gingergarlic paste, then potatoes are green peas are added and cooked to perfection. I have used Kashmiri red chilly powder for this recipe and if you don’t it handy, you can add regular red chilly powder. Kashmiri red chilly has an unique bright red colour and a very strong flavour which is the key in this recipe.

Aloo Matar Recipe (Potato & Green Peas Curry)

Ingredients

  • Vegetable oil – 1 Tbsp
  • Cumin seeds – 1/2 Tsp
  • Kassori methi -1/2 Tsp
  • Turmeric powder – 1 Tsp
  • Cumin powder -1/2 Tsp
  • Kashmiri red chilly -1 Tsp
  • Coriander powder -1/4 Tsp
  • Gingergarlic paste -1 Tsp
  • Onion -1 chopped
  • Potatoes -2 cup, diced
  • Green peas -2 cups, frozen
  • Water -1 cup
  • Salt to taste
  • Coriander leaves-1 Tbsp, chopped

Directions

  1. Heat up oil in a thick bottomed cooking vessel.
  2. Add cumin seeds and kasoori methi.
  3. Let it fry for a couple of minutes on slow fire.
  4. Then add gingergarlic paste, powdered spices and cook until the raw flavour goes away.
  5. Make sure to keep the flame on low to avoid burning and stir constantly .
  6. Then add potatoes and green peas mix well in the cooked spices
  7. Pour water and season.
  8. Let it cook on a slow flame the potatoes are soft.
  9. Adjust the seasoning to your taste and finish with chopped coriander leaves.
  10. Enjoy you aloo Matar with roti or Rice.
