Vegan Vegetable, Split Pea & Quinoa Stew is a perfect winter vegan stew made with carrot 🥕, potato 🥔, quinoa, split pea lentil, spices and spinach. A very easy and simple to make quinoa stew with the richness of split pea lentil slowly cooked in spices.

I have not used any complicated spice mix combination, I just kept it very straight forward and used only a couple of spices such as turmeric powder and cumin powder.

Quinoa, vegetables and split pea are slowly cooked in the spice combination and finished by adding spinach leaves. The key here in this recipe is to cook the stew on a very slow flame for about 25 to minutes.

Vegan Vegetable, Split Pea & Quinoa Stew Recipe


  1. Quinoa -1 cup
  2. Extra virgin olive oil -1 Tbsp
  3. Garlic -1/2 Tbsp , chopped
  4. Garlic -1/2 Tbsp, chopped
  5. Onion -1 medium, chopped
  6. Cumin powder -1/2 Tsp
  7. Turmeric powder -1/2 Tsp
  8. Split peas – 1/2 cup
  9. Green gram -1/4 cup
  10. Carrot -2, peeled and diced
  11. Potato -2 peeled and diced
  12. Cherry tomatoes -1/2 cup, quarter
  13. Spinach – 1 cup, shredded
  14. Salt to taste
  15. Freshly ground black pepper to taste
  16. Water or vegetable broth -3 cups


  1. Wash and drain quinoa and split peas.
  2. In thick bottomed cooking vessel, heat up extra virgin olive oil.
  3. Add in onion, garlic and ginger and cook on a slow heat for a couple of minutes.
  4. Stir in turmeric powder and cumin powder and cook until the flavour become apparent.
  5. Now add the quinoa and split peas, green gram and mix well with spices.
  6. Add vegetable broth followed by vegetables
  7. Season with salt and freshly ground black pepper.
  8. Once boiling, reduce flame to simmer and cook until soft.
  9. Make sure to keep the flame 🔥 on slow and keep the lid on.
  10. When quinoa and vegetables are cooked, stir in shredded spinach.
  11. Adjust the seasoning to taste.
  12. Serve hot. Enjoy.
